Skagenröra means Skagen mix, and was created by the legendary Swedish chef Tore Wretman in 1950. Legend has it he was sailing in Skagen, Denmark, and picked up a few things – prawns, eggs and oil. Hey presto – a delicious mayonnaise based prawn salad. The dish is extremely popular in restaurants throughuot Sweden, where it is often served on a piece of toast as a starter. Try toasting your favourite bread – we like a light sourdough – and butter lightly, before adding Skagenröra on the top. Add a few extra prawns and some roe, fresh dill and perhaps a squeeze of lemon. It is also great as topping for a jacket potato – or simply eaten on crispbread.
